I don’t know about you, but in the summer when it is very hot, I try to prepare lighter meals that don’t require a lot of cooking and baking. I live in Minnesota, where the air conditioning is used most of the time during the summer, which makes it easier to cook anything you want in a cool, nice kitchen, but for the ones who do not have access to that, here are some ideas for hot days when the weather is oppressing and the last thing you want in this life is to be stuck in the kitchen.
Chickpeas Cucumber and Tomato Salad– remember that can of chickpeas you have in the pantry and don’t know what to do with it? Take it out and let’s use it!
Mexican Pinto Bean Salad with Jalapeño Pepper– What about those cans of beans you have in the pantry? Make sure you get only the ones that contain water and salt, as you can use them in any recipe, like this one:
Quick Romanian Summer Salad– In Minnesota, because of the short gardening season, we have access to local tomatoes,peppers or cucumbers very late in the summer. Of course we have supermarkets and you can find anything you want anytime of the year
Pico de Gallo with Tuna– a great Mexican traditional recipe. Light, delicious and easy to make, this recipe can be used as an appetizer or served as a salad.
Romanian Tomato Soup– Great soup that can be eaten cold or warm.
Transylvanian Green Bean Soup– Green Beans are in season, so it is a great opportunity to make this soup with fresh ones. Buy them at the Farmers Market and enjoy them while they last!
Chicken Breast Schnitzel– Make them in the evenings, when it gets cooler outside and make more than just what you eat once. You will be grateful to have some leftovers in the fridge for the next few days, if they last. They are wonderful in a sandwich, for a picnic, for work or just as a snack. Great with light salads or next to a potato salad. When we travel in the car, on vacations, I always take with us few chicken schnitzels that we put in between two pieces of good bread, as a sandwich. We do not stop anywhere to spend money on junk food and everyone loves them.
Romanian Chiftele– Awesome ones, like the Chicken Schnitzels, these “Chiftele”, or meat patties are awesome with salads and any other side dish.
